Avocado Salsa Ingredients
  • 2 pieces avocado diced
  • 1/4 cup red onion diced
  • 1 piece jalapeno finely diced
  • 1 tablespoon cilantro chopped
  • 1 tablespoon lime juice
  • salt to taste
  • 1 cup cucumber diced
  • 1/4 cup green onion diced
  • 1 tablespoon parsley chopped
  • 1 tablespoon lemon juice

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Rub the salmon fillets with oil and cajun seasoning.
  3. Place the salmon on a baking sheet and bake for 10 minutes, or until cooked through.
  4. While the salmon is baking, prepare the avocado salsa by combining diced avocado, red onion, jalapeno, cilantro, lime juice, cucumber, green onion, parsley, lemon juice, and salt in a bowl.
  5. Once the salmon is done, serve it topped with the avocado salsa.
