Ingredients
  

Taco Filling
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans cooked and drained
  • 1 cup corn cooked
  • 1 cup cheddar cheese shredded
Taco Shells
  • 8 taco shells hard or soft
Toppings
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1/2 cup sour cream
  • 1/4 cup jalapeños sliced

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning, black beans, and corn to the skillet. Stir well and cook for 5 minutes.
Assemble Tacos
  1. Place taco shells in a baking dish.
  2. Fill each shell with the beef mixture and top with shredded cheddar cheese.
Bake
  1. Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
Serve
  1. Top with lettuce, tomatoes, sour cream, and jalapeños before serving.
