Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Marinade
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Garnish
  • 2 tablespoons fresh parsley, chopped

Method
 

Marinate Chicken
  1. In a bowl, whisk together balsamic vinegar, olive oil, honey, garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Cook Chicken
  1. Heat a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and add to the skillet. Cook for 6-7 minutes on each side until golden brown and cooked through.
  2. Pour the reserved marinade into the skillet and bring to a simmer. Cook for an additional 2-3 minutes until the sauce thickens slightly.
Serve
  1. Remove chicken from skillet and let rest for a few minutes. Slice and serve drizzled with the balsamic sauce and garnished with fresh parsley.

Notes

For best results, marinate the chicken for a longer period. This dish pairs well with steamed vegetables or a fresh salad.
