Ingredients
  

For the Barbecue Chicken
  • 1 lb boneless, skinless chicken breasts Grilled or cooked
  • 1/2 cup barbecue sauce Your favorite brand
  • 1 tbsp olive oil For grilling
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For the Street Corn
  • 2 ears corn on the cob Grilled or boiled
  • 1/4 cup mayonnaise For coating
  • 1/4 cup cotija cheese Crumbled
  • 1 tbsp lime juice Freshly squeezed
  • 1 tsp chili powder For seasoning
  • 1 tbsp cilantro Chopped, for garnish
For the Tacos
  • 8 small corn tortillas Warmed
  • 1 cup shredded lettuce For topping
  • 1 medium tomato Diced, for topping
  • 1/2 cup sour cream For drizzling

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and coat well.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  3. Once cooked, remove from the grill and brush with barbecue sauce. Let rest for a few minutes before slicing.
Prepare the Street Corn
  1. Grill the corn on the cob until charred, about 10 minutes. Let cool slightly, then cut the kernels off the cob.
  2. In a bowl, mix the corn kernels with mayonnaise, cotija cheese, lime juice, and chili powder.
Assemble the Tacos
  1. Warm the corn tortillas on the grill or in a skillet.
  2. Layer the sliced barbecue chicken, street corn mixture, shredded lettuce, diced tomato, and a drizzle of sour cream on each tortilla.
  3. Garnish with chopped cilantro and serve immediately.
