Ingredients

Pasta
  • 12 oz spaghetti or any pasta of choice
Caramelized Onions
  • 2 large onions sliced
  • 2 tbsp olive oil for cooking
  • 1 tbsp butter for richness
  • 1 tsp salt to taste
  • 1 tsp sugar to enhance caramelization
Sauce
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream for creaminess
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup fresh parsley chopped, for garnish

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
Caramelize the Onions
  1. In a skillet, heat olive oil and butter over medium heat. Add sliced onions, salt, and sugar. Cook, stirring occasionally, for about 20-25 minutes until onions are golden brown and caramelized.
Prepare the Sauce
  1. Add minced garlic to the caramelized onions and cook for an additional 1-2 minutes until fragrant. Pour in the vegetable broth and bring to a simmer.
  2. Stir in the heavy cream and Parmesan cheese, mixing well until the cheese is melted and the sauce is creamy.
Combine and Serve
  1. Add the cooked spaghetti to the skillet and toss to coat the pasta in the sauce. Cook for an additional 2-3 minutes to heat through.
  2. Serve hot, garnished with fresh parsley.
