Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cups bell peppers, diced (mixed colors)
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and spray a large skillet with nonstick cooking spray.
  2. Brown the ground beef and chopped onion over medium heat for 5-7 minutes until fully cooked; drain excess fat.
  3. Add diced bell peppers and cook for another 3 minutes until softened.
  4. Stir in the fire-roasted tomatoes and chili powder; season with salt and pepper. Simmer for 5 minutes.
  5. In a separate bowl, combine sour cream with additional chili powder if desired.
  6. In a greased baking dish, layer half of the meat mixture followed by dollops of sour cream sauce; repeat layers and top with cheddar cheese.
  7. Bake for 25-30 minutes until golden brown and bubbly.
