Ingredients
  

Chicken and Rice
  • 1 lb boneless, skinless chicken breasts diced
  • 1 cup long-grain white rice uncooked
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup chicken broth
  • 1 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup fresh cilantro chopped for garnish

Method
 

Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
Adding Ingredients
  1. Stir in the rice, black beans, corn, chicken broth, salsa, chili powder, cumin, garlic powder, and onion powder. Bring to a boil.
Simmering
  1. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and has absorbed the liquid.
Finishing Touches
  1. Remove from heat and stir in the shredded cheese until melted. Garnish with fresh cilantro before serving.
