Ingredients
  

For the Chicken Marinade
  • 1 pound boneless chicken thighs cut into bite-sized pieces
  • 1 cup plain yogurt for marinating
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cloves garlic minced
  • 1 inch ginger grated
For the Sauce
  • 2 tablespoons vegetable oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 can crushed tomatoes about 14 ounces
  • 1 cup heavy cream
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup fresh cilantro for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, paprika, salt, pepper, garlic, and ginger. Add chicken pieces and coat well. Cover and refrigerate for at least 1 hour or overnight.
Cook the Chicken
  1. Preheat the grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked. Remove from heat and set aside.
Prepare the Sauce
  1. In a large skillet, heat vegetable oil over medium heat. Add chopped onion and sauté until translucent. Add garlic and ginger, cooking for another minute.
  2. Stir in crushed tomatoes, heavy cream, garam masala, cumin, salt, and sugar. Simmer for 10-15 minutes, stirring occasionally.
Combine and Serve
  1. Add the cooked chicken to the sauce and stir to combine. Cook for an additional 5 minutes. Garnish with fresh cilantro before serving.
