Pudding Base
  • 1 cup coconut milk full-fat for creaminess
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey for sweetness
  • 1 teaspoon vanilla extract
Toppings
  • 1/2 cup fresh berries such as strawberries or blueberries
  • 2 tablespoons toasted coconut flakes
  • 1 tablespoon nuts such as almonds or walnuts, chopped

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup, and vanilla extract until well combined.
  2. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
Serve
  1. Once the pudding has thickened, stir it well and divide it into serving glasses.
  2. Top with fresh berries, toasted coconut flakes, and chopped nuts before serving.

Notes
