Ingredients
  

Base Ingredients
  • 2 cans full-fat coconut milk Chilled
  • 3/4 cup granulated sugar Adjust to taste
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
Optional Mix-ins
  • 1/2 cup shredded coconut Unsweetened
  • 1/2 cup chocolate chips Dairy-free

Method
 

Prepare the Mixture
  1. In a mixing bowl, whisk together the chilled coconut milk, granulated sugar, vanilla extract, and salt until the sugar is dissolved.
Chill the Mixture
  1. Cover the bowl and refrigerate the mixture for at least 2 hours or until thoroughly chilled.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Mix-ins
  1. If using, add the shredded coconut and/or chocolate chips during the last few minutes of churning.
Freeze
  1. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours to firm up before serving.
