Ingredients
  

Pasta
  • 8 oz fusilli pasta or any pasta of choice
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp dried oregano
Cheese
  • 1/2 cup feta cheese crumbled

Method
 

Prepare the Pasta
  1. Cook the fusilli pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
Prepare the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, minced garlic, dried oregano, salt, and pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Add crumbled feta cheese on top and serve chilled.
