Ingredients
  

Cilantro-Lime Rice
  • 1 cup white rice uncooked
  • 2 cups water
  • 1 tablespoon lime juice
  • 1/4 cup cilantro chopped
  • 1/2 teaspoon salt
Protein
  • 1 pound chicken breast or tofu for vegetarian option
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup romaine lettuce chopped
  • 1 medium tomato diced
  • 1 avocado sliced
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup sour cream
  • 1/4 cup salsa

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. Combine rice, water, and salt in a rice cooker and cook according to the manufacturer's instructions.
  2. Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro.
Cook the Protein
  1. In a skillet, heat olive oil over medium heat. Season the chicken (or tofu) with chili powder, cumin, garlic powder, salt, and pepper.
  2. Cook the chicken for about 6-7 minutes per side, or until fully cooked. Remove from heat and let it rest before slicing.
Assemble the Bowl
  1. In a bowl, layer the cilantro-lime rice, followed by the cooked protein, black beans, corn, lettuce, diced tomato, avocado, cheese, sour cream, and salsa.
  2. Serve immediately and enjoy your homemade Chipotle bowl!
