Salsa Ingredients
  • 2 cups fresh corn kernels can use canned or frozen
  • 1 cup diced tomatoes fresh or canned
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. In a mixing bowl, combine the corn, diced tomatoes, red onion, cilantro, and jalapeño.
  2. Add the lime juice, salt, and black pepper to the bowl and mix well.
  3. Taste and adjust seasoning if necessary.
  4. Serve immediately with tortilla chips or as a topping for tacos.
