Ingredients
  

Meat and Vegetables
  • 1 lb ground beef or ground turkey
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 cup corn canned or frozen
  • 1 can black beans drained and rinsed
  • 1 cup salsa your choice of heat level
Cornbread Topping
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 tbsp baking powder
  • 1 cup shredded cheese cheddar or your choice

Method
 

Prepare the Meat Mixture
  1. Preheat the oven to 375°F (190°C). In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
  3. Stir in corn, black beans, and salsa. Mix well and remove from heat.
Make the Cornbread Topping
  1. In a mixing bowl, combine cornmeal, milk, egg, and baking powder. Stir until just combined.
  2. Fold in shredded cheese.
Assemble and Bake
  1. Spread the meat mixture evenly in a baking dish.
  2. Pour the cornbread batter over the meat mixture, spreading it evenly.
  3. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  4. Let cool for a few minutes before serving.
