Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cups milk
  • 1 large orange zest (divided)
  • 0.25 cups orange juice
  • 6 Tbsp unsalted butter
  • 0.75 cups granulated sugar
  • 2 large eggs
  • 1.5 cups fresh cranberries
  • 0.5 Tbsp all-purpose flour (for tossing cranberries)
  • 1 cups powdered sugar
  • 1.5 Tbsp orange juice (for glaze)
  • 1 tsp orange zest (reserved for glaze)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking powder, and salt.
  3. In another bowl, combine the milk, orange zest, orange juice, butter, granulated sugar, and eggs. Mix until blended.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Toss the cranberries with the 0.5 Tbsp all-purpose flour, then gently fold them into the batter.
  6. Pour the batter into a greased loaf pan and smooth the top.
  7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  8. For the glaze, mix together the powdered sugar, 1.5 Tbsp orange juice, and 1 tsp orange zest until smooth. Adjust orange juice as needed for desired consistency.
  9. Allow the bread to cool before drizzling the glaze on top.
