Ingredients
  

Batter
  • 1 head cauliflower (about 2 pounds, cut into 2" bite-sized pieces)
  • 1 cup cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon kosher salt
  • 1 tablespoon white pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1.5 cups ice cold soda water
  • 1 quart neutral oil (for frying)
Sauce
  • 0.5 cup soy sauce (low sodium)
  • 3 tablespoons sugar
  • 2 tablespoons honey
  • 2 tablespoons gochujang
  • 0.5 tablespoon gochugaru
  • 1 tablespoon rice vinegar
  • 0.25 cup water
  • 1 teaspoon sesame seeds

Method
 

Preparation
  1. Cut cauliflower into bite-sized florets and set on a tray.
  2. In a large bowl, mix together cornstarch, flour, baking powder, salt, pepper, garlic powder, onion powder, and soda water until smooth.
  3. Add cauliflower pieces into the batter and mix well until fully coated.
Cooking
  1. Heat the oil in a pot or dutch oven over medium-high heat until it reaches 375°F.
  2. Working one piece at a time, allow excess batter to drip off before adding cauliflower to the oil. Fry for 5-6 minutes until crispy and golden brown.
  3. Drain on a wire rack and immediately sprinkle with salt.
Sauce
  1. In a small saucepan, mix soy sauce, sugar, honey, gochujang, gochugaru, rice vinegar, and water over medium heat until bubbling and thickened.
  2. Brush the sauce onto the fried cauliflower and season with scallions and sesame seeds.
