Ingredients
  

For the Pot Roast
  • 3 lbs beef chuck roast
  • 1 cup beef broth
  • 1 cup honey
  • 2 tbsp chipotle peppers in adobo sauce minced
  • 1 tbsp garlic minced
  • 1 tbsp onion powder
  • 1 tbsp cumin
  • 1 tbsp salt
  • 1 tsp black pepper
For Serving
  • 8 small corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup lime wedges

Method
 

Prepare the Pot Roast
  1. In a bowl, mix together honey, chipotle peppers, garlic, onion powder, cumin, salt, and black pepper.
  2. Place the beef chuck roast in the crockpot and pour the honey-chipotle mixture over it.
  3. Add beef broth to the crockpot.
  4. Cover and cook on low for 8 hours or until the meat is tender.
Assemble Tacos
  1. Once the pot roast is cooked, shred the meat with two forks.
  2. Warm the corn tortillas in a skillet or microwave.
  3. Fill each tortilla with shredded pot roast, and top with cilantro, red onion, and a squeeze of lime.

Notes
