Crockpot Mexican Chicken

Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts
  • 1 cup salsa mild or spicy, based on preference
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the salsa, black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, and black pepper on top of the chicken.
  3. Stir gently to combine all ingredients.
Cooking
  1. Cover and cook on low for 6 hours or on high for 3 hours.
  2. Once cooked, shred the chicken using two forks and mix it back into the sauce.
Serving
  1. Serve warm with tortillas, rice, or over a salad.
  2. Top with avocado, cheese, or sour cream if desired.
