Ingredients
  

  • 1.25 cups pecan halves, finely chopped
  • 16 pieces pecan halves, for decoration optional
  • 3 tablespoons unsalted butter for toasting pecans
  • 8 ounces unsalted butter melted until browned (about 2 sticks)
  • 2.5 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup dark brown sugar, packed
  • 0.5 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 pieces large eggs at room temperature
  • 1 piece egg yolk at room temperature

Method
 

  1. Toast the chopped pecans in 3 tablespoons of unsalted butter until fragrant.
  2. Melt 8 ounces of unsalted butter until browned and set aside to cool.
  3. In a bowl, combine 2.5 cups of all-purpose flour, 1 tablespoon of cornstarch, 0.75 teaspoon of salt, 0.5 teaspoon of ground cinnamon, and 1 teaspoon of baking soda.
  4. In another bowl, mix 1 cup of dark brown sugar and 0.5 cup of granulated sugar with the browned butter.
  5. Add 1 tablespoon of vanilla extract, 2 large eggs, and 1 egg yolk to the sugar mixture and mix until smooth.
  6. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  7. Fold in the toasted pecans.
  8. Scoop dough onto a baking sheet and top each cookie with a whole pecan half if desired.
  9. Bake in a preheated oven at 350°F (175°C) for 10 minutes or until golden brown.
  10. Allow to cool before serving.
