Ingredients
  

  • 2 cups broccoli florets
  • 1 cup wild rice rinsed
  • 4 cups low-sodium vegetable or chicken broth
  • 4 oz cream cheese cut into chunks
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • salt to taste
  • pepper to taste

Method
 

  1. Chop the broccoli into bite-sized pieces and dice the onion finely. Rinse the wild rice under cold water until clear.
  2. In a large pot over medium heat, melt 1 tbsp of butter. Add the diced onion and minced garlic; sauté until translucent.
  3. Pour in the broth and stir in the wild rice. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  4. Once the rice is tender, add chunks of cream cheese and stir until melted.
  5. Add the broccoli florets along with thyme, salt, and pepper. Cook for an additional 5 minutes until tender.
  6. Ladle into bowls and garnish with fresh thyme if desired.
