Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 4 tablespoons butter
  • 7 slices bacon chopped
  • 5 potatoes peeled and sliced thin
  • 1 onion peeled and sliced thin
  • 1 tablespoon fresh dill
  • 1/2 cup heavy cream or half & half
  • Salt
  • Pepper
  • Chive or scallion for garnish

Method
 

  1. Preheat the oven according to the puff pastry instructions.
  2. In a skillet, melt the butter over medium heat and cook the chopped bacon until crispy.
  3. Add the sliced onions to the skillet and cook until softened.
  4. Stir in the sliced potatoes, heavy cream (or half & half), dill, salt, and pepper; cook until potatoes are tender.
  5. Roll out the thawed puff pastry and fit it into a pie dish.
  6. Pour the potato and bacon mixture into the pastry shell.
  7. Bake in the preheated oven until the crust is golden brown, approximately 30-40 minutes.
  8. Garnish with chives or scallions before serving.
