  • 0.5 teaspoon ground black pepper

  • 2 teaspoons extra virgin olive oil
  • 4 cups fresh baby spinach
  • 2 cloves garlic
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 large egg yolk
  • 1 teaspoon water
  • 1 sheet frozen puff pastry
  • 2 6-ounce salmon fillets

Method
 

  1. Preheat the oven according to puff pastry instructions.
  2. In a skillet, melt the butter and add the olive oil over medium heat.
  3. Sauté the garlic until fragrant, then add the spinach and cook until wilted.
  4. Stir in the Dijon mustard, ½ teaspoon kosher salt, black pepper, thyme, and Parmesan cheese until combined.
  5. Lay the thawed puff pastry on a baking sheet and roll out slightly if needed.
  6. Place the spinach mixture in the center of the pastry, forming a rectangle.
  7. Season the salmon fillets with remaining salt and pepper and place them on top of the spinach.
  8. Fold the pastry over the salmon and seal the edges.
  9. Mix the egg yolk with water and brush the mixture over the pastry.
  10. Bake until golden brown, about 25 minutes.
