  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 cup mashed ripe bananas about 2 bananas
  • 1 cup crushed pineapple drained
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut unsweetened

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, mashed bananas, crushed pineapple, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped walnuts and shredded coconut.
  6. Divide the batter evenly among muffin tins lined with paper liners.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
