Ingredients
  

  • 3/4 cup granulated sugar
  • 1/2 cup 2% milk
  • 1/2 cup canola oil or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract or almond extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups diced strawberries
  • 2 tablespoons all-purpose flour (for coating strawberries)
  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1/3 cup finely diced strawberries
  • 1/2 teaspoon vanilla extract or almond extract
  • 1-2 tablespoons heavy cream or milk

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix sugar, milk, oil, egg, and vanilla until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Toss diced strawberries in 2 tablespoons of flour, then fold them into the batter.
  6. Pour the batter into a greased loaf pan and spread evenly.
  7. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, mix powdered sugar, melted butter, diced strawberries, vanilla, and enough cream or milk to reach desired consistency.
  10. Drizzle glaze over cooled bread before serving.
