Ingredients
  

  • 4 fillets salmon 6 oz each
  • 2 large fresh oranges juice and zest
  • 1 cup bell peppers mixed red and yellow, chopped
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • Salt to taste
  • Pepper to taste
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Chop the bell peppers and asparagus; spread them on the baking sheet.
  3. Drizzle olive oil over the veggies, season with salt and pepper, and toss to combine.
  4. In a small bowl, whisk together soy sauce, honey, orange juice, minced garlic, and orange zest. Reserve half for later.
  5. Place salmon fillets in the center of the vegetable mix; drizzle with remaining sauce and top each fillet with orange slices.
  6. Bake for 15-20 minutes until salmon flakes easily with a fork.
