Ingredients

Dry Ingredients
  • 2 cups all-purpose flour spooned and leveled
  • 3 tbsp dark brown sugar packed
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg freshly grated preferred
  • 0.25 tsp ground ginger
  • 0.5 tsp fine sea salt
Wet Ingredients
  • 1 cup whole milk ricotta cheese creamy and rich
  • 0.75 cup pure pumpkin puree not pumpkin pie mix
  • 1.25 cups buttermilk for tenderness
  • 2 large eggs separated
  • 3 tbsp unsalted butter melted
  • 1.5 tsp pure vanilla extract
Whipped Spiced Maple Butter & Serving
  • 0.5 cup unsalted butter softened
  • 2 tbsp pure maple syrup
  • 0.5 tsp ground cinnamon
  • 0.25 cup toasted pecans for crunch and garnish

Method

Step-by-Step Cooking Walkthrough
  1. Whisk dry ingredients: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and fine salt until evenly distributed.
  2. Blend wet ingredients: In a separate medium bowl, whisk together the creamy ricotta cheese, pure pumpkin puree, buttermilk, egg yolks (reserving the whites), melted butter, and vanilla extract until smooth.
  3. Whip egg whites (The Cloud-Fluff Secret): In a clean small bowl, beat the 2 egg whites with a hand whisk or mixer for 2 minutes until soft peaks form.
  4. Combine gently: Pour wet ingredients into the dry ingredients and stir with a rubber spatula just until barely moistened (do not overmix; lumps are totally fine). Gently fold in the whipped egg whites in two batches until incorporated.
  5. Cook on griddle: Heat a cast-iron griddle or non-stick skillet over medium-low heat. Brush lightly with butter. Scoop 1/3-cup portions of batter onto the griddle. Cook 3 to 4 minutes until bubbles break on top and edges look matte and set. Flip carefully and cook 2 to 3 minutes more until golden brown and cooked through.
  6. Whip butter & serve: Whip softened butter, maple syrup, and cinnamon with a fork until fluffy. Stack warm pancakes high, top with a quenelle of whipped spiced butter, toasted pecans, and warm maple syrup.

Notes

Folding whipped egg whites into ricotta-based batter creates an ethereal, souffle-like pancake texture that stays light, fluffy, and never dense.
