Salad Ingredients
  • 4 medium ripe peaches halved and pitted
  • 8 ounces burrata cheese sliced
  • 4 cups mixed greens such as arugula and spinach
  • 1/4 cup toasted walnuts chopped
Basil Mint Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1/4 cup fresh basil leaves packed
  • 1/4 cup fresh mint leaves packed
  • 1 clove garlic minced

Method
 

Prepare the Vinaigrette
  1. In a mixing bowl, whisk together the olive oil, white balsamic vinegar, honey, minced garlic, basil, and mint until well combined. Season with salt and pepper to taste.
Grill the Peaches
  1. Preheat the grill to medium-high heat. Brush the peach halves with a little olive oil and place them cut-side down on the grill. Grill for about 4-5 minutes until grill marks appear and the peaches are slightly softened.
Assemble the Salad
  1. On a serving platter, arrange the mixed greens. Top with grilled peach halves, slices of burrata, and sprinkle with toasted walnuts. Drizzle with the basil mint vinaigrette.
