  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup sunflower seeds
Wet Ingredients
  • 2 tbsp honey
  • 2 tsp active dry yeast
  • 1 1/4 cups warm water 100°F to 110°F

Method
 

Preparation
  1. Activate the yeast by mixing warm water and honey in a small bowl. Sprinkle yeast on top and let sit for 5 minutes until frothy.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, oats, and sunflower seeds.
  3. Pour the activated yeast mixture into the flour mix and stir to form a shaggy dough.
  4. Knead on a floured surface for about 10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm spot until doubled (about 1 hour).
  6. Punch down the dough, shape it into a loaf, place it in a greased pan, and let rise again for 30-45 minutes.
  7. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
