Ingredients
  

Pork
  • 3 pounds pork shoulder cut into large chunks
Spices
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Liquids
  • 1 cup orange juice
  • 1 onion onion chopped
  • 4 cloves garlic minced
  • 1 cup chicken broth
Toppings
  • 1 cup fresh cilantro chopped
  • 1 lime lime cut into wedges

Method
 

Prepare the Pork
  1. In a large bowl, combine the pork shoulder chunks with cumin, oregano, chili powder, salt, and black pepper. Mix well to coat the pork evenly.
Sauté
  1. Set the Instant Pot to 'Sauté' mode. Add a bit of oil and sear the pork chunks on all sides until browned, about 5-7 minutes.
Pressure Cook
  1. Add the chopped onion, minced garlic, orange juice, and chicken broth to the pot. Close the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' for 60 minutes.
Release Pressure
  1. Once cooking is complete, allow the pressure to release naturally for 15 minutes, then quick release any remaining pressure.
Shred and Serve
  1. Remove the pork from the pot and shred it using two forks. Serve with chopped cilantro and lime wedges.

Notes

For extra crispy carnitas, spread the shredded pork on a baking sheet and broil for 5-7 minutes after cooking.
