Ingredients
  

Pasta
  • 12 oz spaghetti or your preferred pasta
Sauce
  • 1 cup ricotta cheese
  • 1 medium lemon zested and juiced
  • 1/2 cup parmesan cheese grated
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1/4 tsp red pepper flakes optional
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
  • 1/4 cup fresh basil chopped, for garnish

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare Sauce
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  2. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, parmesan cheese, salt, and black pepper. Mix until smooth.
Combine
  1. Add the drained pasta to the skillet with the garlic oil. Pour the ricotta mixture over the pasta and toss to combine, adding reserved pasta water as needed to reach desired creaminess.
  2. Serve immediately, garnished with fresh basil.

Notes
