Ingredients
  

Stuffing
  • 2 medium yellow squash halved and seeds removed
  • 1 cup cooked quinoa
  • 1 cup chopped spinach fresh or frozen
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon olive oil for sautéing
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup grated Parmesan cheese optional

Method
 

Prepare the Squash
  1. Preheat the oven to 375°F (190°C). Cut the yellow squash in half lengthwise and scoop out the seeds to create a cavity for the stuffing.
Make the Filling
  1. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until translucent.
  2. Stir in chopped spinach, cooked quinoa, oregano, salt, and pepper. Cook for an additional 2-3 minutes until spinach is wilted.
  3. Remove from heat and mix in Parmesan cheese if using.
Stuff and Bake
  1. Fill each squash half with the quinoa mixture and place in a baking dish. Cover with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes until the squash is tender and the tops are slightly golden.
