Ingredients
  

  • 7 g active dry yeast
  • 120 ml warm water
  • 100 g caster sugar
  • 120 ml warm whole milk
  • 1 large egg
  • 60 g unsalted butter melted
  • 2 tsp pure vanilla extract
  • 500 g plain flour
  • 1/2 tsp salt
  • 1-2 litres neutral oil for frying
  • 200 g icing sugar for dusting

Method
 

  1. In a small bowl, stir together the warm water, 1 tsp of caster sugar, and yeast. Let stand for 5-10 minutes until a frothy layer forms on top.
  2. In a stand mixer bowl, combine warm milk, remaining caster sugar, egg, melted butter, and vanilla. Add the yeast mixture, then the flour and salt. Knead with a dough hook for 5-7 minutes until smooth and supple.
  3. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-2 hours, or until it has doubled in size.
  4. Punch down the dough and roll it out on a floured surface to 1/2-inch thickness. Cut into 2-inch squares. Place on a floured tray, cover, and let rest for 15-20 minutes.
  5. Heat 2-3 inches of oil in a heavy-based pan to 180°C. Fry the beignets in small batches for 1-2 minutes per side until golden brown and puffed up.
  6. Remove beignets to a wire rack lined with paper towels. While still hot, dust them generously with icing sugar and serve immediately.

Notes

Feel free to experiment with the vanilla by adding various extracts like almond or hazelnut. You could also fold in chocolate chips or zest from citrus fruit for a zesty twist. Store leftover beignets in an airtight container at room temperature for up to two days. For reheating, toss them in a preheated oven at 180°C for about 5-7 minutes to restore that warm, fresh texture.
