Mango Sago

Ingredients
  

Sago Pearls
  • 1 cup sago pearls soaked in water for 30 minutes
Mango Mixture
  • 2 cups ripe mangoes peeled and diced
  • 1 cup coconut milk for creaminess
  • 2 tablespoons sugar adjust to taste
Toppings
  • 1 cup diced mango for garnish
  • 1 tablespoon mint leaves for garnish

Method
 

Prepare Sago
  1. Bring a pot of water to a boil. Add the soaked sago pearls and cook for about 30 minutes until translucent.
  2. Once cooked, drain the sago pearls using a strainer and rinse under cold water. Set aside.
Make Mango Mixture
  1. In a blender, combine the diced mangoes, coconut milk, and sugar. Blend until smooth.
Combine and Serve
  1. In a large bowl, mix the cooked sago pearls with the mango mixture until well combined.
  2. Spoon the mixture into serving bowls and top with diced mango and mint leaves.
  3. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a richer flavor, you can use coconut cream instead of coconut milk.
