Ingredients
  

Salad Ingredients
  • 4 ears corn grilled and kernels removed
  • 1 cup cherry tomatoes halved
  • 1 cup red onion finely chopped
  • 1 cup cilantro chopped
  • 1 cup avocado diced
Dressing Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cotija cheese crumbled

Method
 

Prepare the Corn
  1. Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally until charred. Remove from grill and let cool before cutting off the kernels.
Make the Dressing
  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and black pepper. Mix well until smooth.
Combine Salad
  1. In a large mixing bowl, combine grilled corn kernels, cherry tomatoes, red onion, cilantro, and avocado. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Top with crumbled cotija cheese and serve immediately.
