  • 500 grams 00 flour High-gluten flour for best results
  • 325 ml water Room temperature
  • 10 grams salt Sea salt preferred
  • 2 grams instant yeast Or active dry yeast

Method
 

Mixing the Dough
  1. In a mixing bowl, combine the flour and salt.
  2. In a separate bowl, dissolve the yeast in the water.
  3. Gradually add the water mixture to the flour, stirring with a wooden spoon until a shaggy dough forms.
Kneading
  1. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
First Rise
  1. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise at room temperature for 1-2 hours, or until doubled in size.
Shaping the Dough
  1. Once risen, punch down the dough and divide it into 4 equal pieces.
  2. Shape each piece into a ball and place on a floured surface, covering with a damp cloth.
  3. Let the dough balls rest for at least 30 minutes before stretching into pizza bases.
