Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons granulated sugar
Cheesecake Filling
  • 8 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped
Toppings
  • 1/2 cup salted caramel sauce store-bought or homemade
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh figs sliced
  • 1 teaspoon sea salt for garnish

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  2. Press the mixture evenly into the bottom of mini cheesecake molds.
Make the Cheesecake Filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add sour cream, powdered sugar, and vanilla extract. Mix until well combined.
  3. Gently fold in the whipped heavy cream until fully incorporated.
Assemble the Cheesecakes
  1. Spoon the cheesecake filling over the crust in the molds, smoothing the top with a spatula.
  2. Refrigerate for at least 2 hours or until set.
Serve
  1. Once set, remove the cheesecakes from the molds.
  2. Drizzle with salted caramel sauce, and top with blackberries and sliced figs. Sprinkle with sea salt before serving.
