  • 1 cup fresh pineapple diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 medium lime juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. In a mixing bowl, combine the diced pineapple, chopped red onion, cilantro, and minced jalapeño.
  2. Squeeze the lime juice over the mixture and add salt and black pepper.
  3. Toss all the ingredients together until well mixed.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately or refrigerate for up to an hour to allow flavors to meld.
