Ingredients
  

Rice
  • 1 cup white rice or brown rice
Beans
  • 1 can black beans drained and rinsed
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 1 cup corn optional
Spices
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 2 cups vegetable broth
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cooking the Rice
  1. In a pot, bring 2 cups of vegetable broth to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
Sautéing the Vegetables
  1. In another pan, heat a little oil over medium heat. Add chopped onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.
Combining Ingredients
  1. Add the drained black beans, corn, cumin, paprika, salt, and pepper to the sautéed vegetables. Stir well and cook for another 5 minutes.
Mixing Rice and Beans
  1. Once the rice is cooked, fluff it with a fork and then add it to the bean mixture. Stir to combine and heat through.
Serving
  1. Serve hot, garnished with fresh cilantro and lime wedges.
