Ingredients
  

Plantains
  • 2 large ripe plantains should be yellow with black spots
Oil
  • 2 tablespoons vegetable oil or coconut oil
Sugar
  • 1 tablespoon brown sugar optional for extra sweetness

Method
 

Preparation
  1. Peel the plantains and slice them diagonally into 1-inch thick pieces.
Cooking
  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the sliced plantains to the skillet in a single layer and cook for about 3-4 minutes on each side until golden brown.
  3. If desired, sprinkle brown sugar over the plantains during the last minute of cooking for extra caramelization.
  4. Remove from heat and serve warm.
