  • 1 Tablespoon water or milk for egg wash
  • 1 egg beaten for egg wash
Filling
  • 3 Tablespoons unsalted butter
  • 3/4 cup sliced shallots about 2–3 shallots
  • 1 lb sliced mushrooms
  • 4 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried
  • 2 teaspoons chopped fresh rosemary or 1 teaspoon dried
  • 1 Tablespoon balsamic vinegar
  • 1 cup crumbled gorgonzola cheese
  • flaky sea salt for sprinkling
  • pepper to taste
  • more cheese to taste
  • more fresh herbs to taste
  • balsamic glaze for drizzling

Method
 

Preparation Steps
  1. Preheat the oven.
  2. Prepare the pastry according to the instructions.
  3. Melt the butter in a pan over medium heat and sauté the shallots until translucent.
  4. Add the sliced mushrooms and cook until they release their moisture.
  5. Stir in the minced garlic, salt, pepper, thyme, rosemary, and balsamic vinegar; cook for an additional few minutes.
  6. Remove from heat and let the mixture cool slightly.
  7. Once cooled, mix in the crumbled gorgonzola cheese.
  8. Roll out the puff pastry and cut into desired shapes.
  9. Place the filling on the pastry, fold, and seal edges.
  10. Brush with egg wash and sprinkle with flaky sea salt.
  11. Bake according to pastry instructions until golden brown.
