  • 3 cups fresh broccoli florets
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp sriracha sauce

Method
 

Cooking Instructions
  1. Preheat oven to 400°F (200°C).
  2. Chop broccoli into bite-sized pieces and slice chicken breasts into strips.
  3. In a large bowl, toss chicken and broccoli with olive oil, garlic, salt, and pepper until evenly coated.
  4. In another bowl, whisk together peanut butter, soy sauce, honey, and sriracha until smooth; add water if needed for consistency.
  5. Spread seasoned chicken and broccoli on a baking sheet; drizzle half of the spicy peanut sauce over the top.
  6. Bake for 20-25 minutes or until chicken is cooked through and slightly caramelized; stir halfway through cooking.
  7. Serve with remaining sauce drizzled on top.
