Ingredients
  

Pork Marinade
  • 2 lbs pork shoulder cut into chunks
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2 tbsp adobo sauce from canned chipotle peppers
  • 2 tbsp achiote paste
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup pineapple chunks fresh or canned
Taco Assembly
  • 8 small corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup onion diced
  • 1 cup lime wedges

Method
 

Prepare the Marinade
  1. In a large bowl, combine orange juice, lime juice, adobo sauce, achiote paste, cumin, oregano, salt, and black pepper. Mix well.
Marinate the Pork
  1. Add the pork shoulder chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Cook the Pork
  1. Transfer the marinated pork and any remaining marinade to the slow cooker. Add the pineapple chunks on top.
  2. Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shredded.
Assemble the Tacos
  1. Once cooked, shred the pork with two forks and mix with the juices in the slow cooker.
  2. Warm the corn tortillas in a skillet or microwave. Fill each tortilla with the shredded pork, and top with cilantro, diced onion, and a squeeze of lime.
