Ingredients
  

  • 1 lb lean ground beef
  • 1 can (15 oz) black beans rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup bell peppers chopped
  • 1 medium onion diced
  • 2 cup shredded cheese your choice
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup crushed tortilla chips for topping

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  3. Sauté the diced onion and bell peppers in the same skillet until soft (about 5 minutes).
  4. Stir in black beans, diced tomatoes, cumin, and chili powder; simmer for 5 minutes.
  5. Layer half of the beef mixture in a greased baking dish; top with half the cheese; repeat layers.
  6. Finish with crushed tortilla chips on top and bake for 25-30 minutes until bubbly.
