Ingredients
  

Fruit
  • 2 cups fresh strawberries hulled and mashed
Sugar
  • 4 cups granulated sugar adjust to taste
Pectin
  • 1 box fruit pectin such as Sure-Jell
Lemon Juice
  • 2 tablespoons fresh lemon juice

Method
 

Prepare the Strawberries
  1. Wash and hull the strawberries, then mash them in a mixing bowl using a potato masher until you have a chunky puree.
Mix Ingredients
  1. Add the granulated sugar and lemon juice to the mashed strawberries. Stir well and let sit for 10 minutes to allow the sugar to dissolve.
Add Pectin
  1. Stir in the fruit pectin into the strawberry mixture and mix thoroughly for about 2 minutes until the pectin is fully dissolved.
Fill Jars
  1. Pour the jam into clean jars, leaving about 1/2 inch of headspace at the top. Seal the jars with lids.
Freeze
  1. Place the jars in the freezer. The jam can be stored in the freezer for up to 1 year.

Notes
