Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Royal Icing
  • 2 cups powdered sugar
  • 1 large egg white or meringue powder equivalent
  • 1 teaspoon lemon juice

Method
 

Prepare the Cookie Dough
  1. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Shape and Bake Cookies
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
  3. Use cookie cutters to cut out swan shapes and place them on a baking sheet lined with parchment paper.
  4. Bake for 12-15 minutes or until the edges are lightly golden.
  5. Allow cookies to cool completely on a wire rack.
Decorate with Royal Icing
  1. In a mixing bowl, combine powdered sugar, egg white, and lemon juice to make royal icing.
  2. Beat until the icing is smooth and holds stiff peaks.
  3. Transfer the icing to a piping bag and decorate the cooled cookies as desired.
  4. Let the icing dry completely before serving or storing.
