  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1.5 teaspoons ground cumin
  • 1 teaspoon seasoned salt
  • 1 teaspoon pepper
Main Ingredients
  • 2-3 large sweet potatoes (about 4.5 to 5 cups, peeled and chopped)
  • 3 tablespoons olive oil
  • 1 15-ounce can black beans (drained and rinsed)
  • 1 15-ounce can fire-roasted corn (drained)
  • 1.5 cups avocado (1 to 2 large avocados)
  • 1/2 cup sour cream (fat-free)
  • 1 teaspoon hot sauce (like Cholula)
  • 2 large limes (plus more for serving if desired)
  • 1 cup rice or quinoa
  • 2 cups chicken stock or broth or water
  • 1 tablespoon butter
  • 1 large lime
  • 1/3 cup finely chopped cilantro

Method
 

Cooking Steps
  1. Preheat oven to 425°F. In a small bowl, combine chili powder, garlic powder, onion powder, dried oregano, paprika, ground cumin, seasoned salt, and pepper.
  2. Peel and chop sweet potatoes into bite-sized chunks. Toss with olive oil and 1 tablespoon + 2 teaspoons of the seasoning mixture, then bake for 15 minutes.
  3. Remove from oven, toss sweet potatoes, and bake for another 15 minutes. If needed, bake for an additional 5–10 minutes or until tender.
  4. Add black beans, drained corn, and 1 more teaspoon of the seasoning mixture to cooked sweet potatoes. Toss to warm beans and corn.
  5. For cilantro lime rice or quinoa, bring 2 cups of water to a boil. Stir in butter and rice; return to a boil. Reduce heat to low, cover, and simmer until cooked through and tender.
  6. Stir in lime zest, lime juice, cilantro, and salt/pepper to taste.
  7. For the sauce, combine sour cream, lime zest, lime juice, hot sauce, and 1/2 to 1 tablespoon of the remaining spice mixture. Whisk until smooth.
  8. In bowls, add rice (or quinoa) as a base. Top with sweet potatoes, corn, black bean mixture, avocado, tomatoes, and cilantro. Drizzle sauce over top and serve with fresh lime.

Notes

Feel free to swap out black beans for pinto beans or add grilled chicken for extra protein. Customize toppings as desired.
