Ingredients
  

Casserole Base
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups tortilla chips crushed
  • 2 cups shredded cheese cheddar or Mexican blend
Toppings
  • 1 cup sour cream for serving
  • 1 cup sliced green onions for garnish
  • 1 cup sliced black olives for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and heat through.
  4. In a large mixing bowl, combine the crushed tortilla chips and half of the shredded cheese.
  5. Layer half of the tortilla chip mixture in the bottom of a 9x13 inch baking dish.
  6. Spread the beef mixture over the chips, then top with the remaining tortilla chip mixture and cheese.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Serve
  1. Remove from oven and let cool for a few minutes.
  2. Top with sour cream, green onions, and black olives before serving.
