Prepare the Casserole
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and heat through.
- In a large mixing bowl, combine the crushed tortilla chips and half of the shredded cheese.
- Layer half of the tortilla chip mixture in the bottom of a 9x13 inch baking dish.
- Spread the beef mixture over the chips, then top with the remaining tortilla chip mixture and cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Serve
- Remove from oven and let cool for a few minutes.
- Top with sour cream, green onions, and black olives before serving.
