Thai Peanut Noodles

Ingredients
  

Noodles
  • 8 oz Rice Noodles or any preferred noodles
Peanut Sauce
  • 1/2 cup Peanut Butter creamy or crunchy
  • 1/4 cup Soy Sauce low sodium preferred
  • 2 tbsp Rice Vinegar
  • 1 tbsp Honey or maple syrup for vegan option
  • 1 tbsp Sesame Oil
  • 1 clove Garlic minced
  • 1 inch Ginger fresh, grated
  • 1 tbsp Sriracha optional for heat
Vegetables
  • 1 cup Bell Pepper sliced
  • 1 cup Carrots julienned
  • 1 cup Cucumber sliced
  • 1 cup Green Onions chopped
Garnish
  • 1/4 cup Chopped Peanuts for topping
  • 1/4 cup Cilantro fresh, chopped

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and set aside.
Make the Peanut Sauce
  1. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and sriracha until smooth.
Combine Ingredients
  1. In a skillet over medium heat, add the cooked noodles and peanut sauce. Toss to combine and heat through.
  2. Add bell pepper, carrots, and cucumber. Stir until vegetables are slightly softened.
Serve
  1. Serve the noodles in bowls, garnished with chopped peanuts and cilantro.
