Ingredients
  

  • 120 ml full fat milk
  • 120 ml water
  • 115 g unsalted butter
  • 1 tablespoon caster sugar
  • ½ teaspoon salt
  • 160 g strong white bread flour or plain flour
  • 3 large eggs
  • 1 large egg white
  • 1 tablespoon grated lemon or orange zest optional
  • 1 l vegetable oil for frying
  • 180 g icing sugar
  • 2-3 tablespoon milk
  • 2 teaspoon vanilla extract or vanilla bean paste optional

Method
 

  1. In a saucepan, combine milk, water, butter, sugar, and salt. Heat over medium heat until the mixture comes to a boil.
  2. Remove the saucepan from heat and add the flour all at once, stirring until the mixture forms a ball.
  3. Let the mixture cool slightly, then add the eggs and egg white one at a time, mixing well after each addition.
  4. If using, incorporate the lemon or orange zest into the dough.
  5. Heat vegetable oil in a deep fryer or large saucepan to 180°C (356°F).
  6. Pipe the dough into cruller shapes using a piping bag with a star tip.
  7. Fry the crullers in hot oil until golden brown, about 5 minutes.
  8. Remove cooked crullers from oil and place on paper towels to drain.
  9. To make the glaze, mix icing sugar, milk, and vanilla extract in a bowl until smooth.
  10. Dip the warm crullers in the glaze and set aside to allow the glaze to set.
