- In a saucepan, combine milk, water, butter, sugar, and salt. Heat over medium heat until the mixture comes to a boil.
- Remove the saucepan from heat and add the flour all at once, stirring until the mixture forms a ball.
- Let the mixture cool slightly, then add the eggs and egg white one at a time, mixing well after each addition.
- If using, incorporate the lemon or orange zest into the dough.
- Heat vegetable oil in a deep fryer or large saucepan to 180°C (356°F).
- Pipe the dough into cruller shapes using a piping bag with a star tip.
- Fry the crullers in hot oil until golden brown, about 5 minutes.
- Remove cooked crullers from oil and place on paper towels to drain.
- To make the glaze, mix icing sugar, milk, and vanilla extract in a bowl until smooth.
- Dip the warm crullers in the glaze and set aside to allow the glaze to set.
