Ingredients
  

Vegetables
  • 4 cups chopped tomatoes fresh or canned
  • 2 cups roasted red peppers jarred or homemade
  • 1 medium onion chopped
  • 3 cloves garlic minced
Liquids
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
Seasonings
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried basil or to taste
Garnish
  • 1/4 cup fresh basil leaves chopped

Method
 

Prepare the Soup
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened, about 5 minutes.
  2. Add chopped tomatoes, roasted red peppers, vegetable broth, salt, black pepper, and dried basil. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes, allowing flavors to meld.
Blend and Serve
  1. Using a blender, puree the soup until smooth. If too thick, add more broth to reach desired consistency.
  2. Serve hot, garnished with fresh basil leaves.
